Vegan Scrambled "Eggs" with Mushrooms

silken tofu (soft or firm depending on your preference)
shallots, sliced
mushrooms, sliced
soy sauce
turmeric
olive oil
salt and pepper

Saute mushrooms and shallots with a dash of soy sauce and a bit of olive oil on med-high heat. Cook for 5 minutes or so until mushrooms are slightly softened. Add Tofu, and break apart or (scramble) by mixing everything together with a spatula. Add a few dashes of turmeric. Season with salt and pepper, Serve immediately.

Other variations:
green onions instead of shallots
fresh minced garlic and assorted bell peppers and tomatoes
