This dish was inspired by my sudden urge for Green Papaya Salad; not having all the ingredients and being to lazy to head to the store :) It has a little heat, tons of flavor and a refreshing amount of crunch. We served it up with poached Halibut, and fresh quartered tomatoes and radishes for garnish. Yum!
fresh green beans left long, tips snipped
1-2 cloves garlic pressed
Juice of half a lime
small Serrano chili minced
sesame oil
canola oil
Dash of sugar or sweetener of choice (to taste)
1. Marinate green beans in garlic, minced chili, lime juice and sugar (1/2 -1 hr)
2. 1 part Sesame oil and 1 part Canola oil in fry pan on med- high heat.
3. Add green beans to fry pan, cook until slightly tender but with lots of crunch.
