1/3 cup water
2 TBS flax meal
3 3/4 cup flour
1 1/2 tsp baking powder
1 cup margarine
2 cups powdered sugar
3 TBS soy milk
2 tsp vanilla
1/2 tsp almond extract
3/4 tsp salt
- Preheat oven 350 degrees.
- Bowl 1 (small) : whisk water and flax meal together
- Bowl 2 ( med) : sift flour and baking powder together and mix thoroughly.
- Bowl 3 ( large): mix margarine and sugar until all sugar is incorporated. Then add bowl 1, milk, vanilla, almond, salt and mix well.
- Add half of bowl 2 to bowl 3, mix, the add rest and mix again.
Try adding roasted pine nuts and cardamom into the mix for a different variation or adding your favorite jam to the middle of each cookie. We used marmalade in the middle and it was fantastic!
