Cauliflower & Garbanzo curry

1 Tbs vegetable oil
1 medium yellow onion choppped
3 tsp curry powder
1 small head of cauliflower, cut into florets (about 4 cups)
1 15.5 oz can grabanzo beans, drained and rinsed
1 10 oz can diced tomatoes with chiles
1 cup coconut milk
1/4 cup chopped fresh cilantro
salt and pepper to taste

1. Heat oil in large skillet over high heat. Add onions and saute' until golden brown, about 6 mins.
2. Add curry powder an stir 20 seconds. Add caulifower and garbanzos; stir 1 minute. Add tomtaoes then coconut milk and bring to a boil.
3. Reduce heat to med-low and simmer until cauliflower is tender but still slightly firm.
4. Season with salt and pepper. Dress with cilantro.
