Zucchini & tomato mash

2 zucchini, halved length wise and sliced 1/2' thick
1 can strained diced tomatoes
1/2 onion chopped
2 garlic cloves, sliced thin
1 cup veggie stock
1 bay leaf
olive oil
cumin
turmeric
salt and pepper

1. Cook onions in olive oil in a fry pan on low heat until soft.
2. Add tomatoes, zucchini, garlic, chicken stock, bay leaf. Turn heat to med/high, bring to a low boil, then simmer covered. Cook until most of water has evaporated and Zucchini is soft and mushy.
3. Add salt, pepper, dash of turmeric, cumin to taste.

OPTIONAL: Try adding Roasted Pine nuts on top
