1 1/4 cups flour
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
egg replacer equal to 1 egg
1/4 cup water
3/4 cup sugar
1/4 cup oil
1/2 tsp vanilla
1/2 cup peanut butter (or other nut butter)
Preheat oven to 375. In a medium bowl, stir together flour, baking soda, salt, and cinnamon, set aside. In a small bowl combine oil, water, sugar, vanilla. Add the peanut butter to your liquid mixture in the small bowl a spoonful at a time, whisking it all in until it dissolves. Add your egg replacer to your liquids and then pour the liquids into your dry mixture, stir together until well combined. Roll into 1 1/2 inch balls and place on cookie sheet. Flatten each cookie with a fork, making a criss-cross pattern. Sprinkle each cookie with a pinch of sugar and bake 10-12 minutes. Makes 20-24 cookies.
Note: if using Turbinado or raw sugar you will have to grind the sugar a little finer before using.
