Corn & lemon zest pancakes

I don't know about you, but when I hear the word "pancakes", my vegan heart skips a beat ;) For those of you deprived of those wonderful eggy pancakes and crepes, here's the delicious alternative. These pancakes are dense and well balanced and the lemon zest gives the pancakes an unusual kick. All you need is a little vegan margarine and maple syrup and your in pancake heaven...ahhhhhh ;)

(Makes about 10 pancakes)

3/4 cup all purpose flour
1/2 cup cornmeal
2 tsp baking powder
1/4 tsp salt
2 TBS canola oil ( or any neutral oil)
1 1/4 cup plain soy milk
1/3 cup water
1 tsp vanilla
2 TBS pure maple syrup
2 tsp grated lemon zest

Preheat medium to small non-stick pan on med heat. Sift together flour, cornmeal, baking powder, and salt. In a separate bowl, combine all other ingredients. Add wet to dry, mix until just combined. Do not over mix or pancakes will be tough, a couple of lumps is ok. Spray pan with cooking spray. Use 1/4 cup measuring cup tp our batter into pan. Cook pancakes until brown on bottom and bubbles form on top, about 4 minutes. Flip pancakes over with thin spatula and cook until bottoms are brown and pancakes are barely firm to touch.
