Tomato pesto pasta

Very quick dish! Simple and tasty.The more ripe the tomatoes the better the recipe will be, so get some good ones :)

2 + cups chopped small fresh tomatoes (Campari, Amarosa,Roma)
3-4 garlic cloves
2 large handfuls fresh basil
olive oil
1/2 large cube vegetable bouillon
1 handful toasted pine nuts

1. Chop tomatoes and set aside in a bowl.
2. Wash and drain basil leaves. Mince garlic and basil together until very fine.
3. Set water to boil and cook pasta.
4. Heat olive oil in med saute pan over medium heat. Add tomatoes and bouillon. Bring to a  boil, then reduce to medium heat and cook until a fine puree consistency. Stir in garlic/basil mixture, cook briefly for a minute or two. Remove from heat.
5. Dress pasta and sauce with pine nuts and a dash of pepper. Serve.
