Garlic sauteed prawns w/ mixed baby greens


This was one of my favorite dishes back in my single days. It is relatively quick to make; you end up with a gorgeous meal, and you don't have to wash too many dishes afterwards :) But even when you're not flying solo it makes an excellent meal for two.
Trader Joe's is a easy place to find a bag of uncooked frozen shrimp and a nice bag of mixed baby greens. Feel free to use whatever veggies you have handy for the salad.

Uncooked (fresh or thawed) Prawns
One clove Garlic
Olive oil
Mixed Baby Lettuce Greens
Tomatoes
Mushrooms
Green Onions
Lime
Salt
Pepper

1. Place all your salad veggies and baby greens in a bowl. Add olive oil, fresh squeezed lime juice, salt and pepper to taste. Toss. Dish out on serving plate.
2. Heat olive oil in a non stick fry pan on med-high heat. Place prawns in pan with lots of room between each other (prawns should sizzle when they hit the pan). Cook for about 1 minute on each side, just so they turn color completely, but being careful not to cook them so long that they curl up tight. Turn heat off.
3. Add your fresh pressed garlic clove to Prawns. Add salt and pepper to taste. Toss for a few minutes, serve with salad.
